What's craft bread?

We call it craft bread or artisan bread to flag up the craftsmanship that goes into making each loaf. A baker uses all their senses to make bread.

• We watch the mixing process to make sure the dough absorbs the right amount of water.
• During fermentation, we make sure it smells right and doesn't over/under proof.
• Weighing and shaping's done by hand to ensure the seam (natural dough fold where it was cut) sits correctly.

• We cut it by hand to aid optimum steam release and oven spring (the oven temperature which gives the bread its last rise, also known as bloom).

• As a loaf bakes in the oven, we watch it closely to get the ideal colour and crust.
